When you think of edamame, you probably don't think of sweets. However, we use edamame in traditional Japanese sweets. It just has a different name. We call this Zunda. Because I am Japanese and American, I like to create recipes that represent both cultures. This recipe is a healthy alternative to the crowd favorite with a Japanese twist.
Although this is not a traditional cupcake recipe, it sure tastes like heaven !
Zunda(edamame) cream
Ingredients :
1/2 cup of edamame (just the beans)
4 tbsp of maple syrup
2 tsp arrow root starch
4 tbsp of almond milk or any milk
How to make:
Boil or steam the edamame (in their shell) and then let it cool. Take the edamame beans out of the sell and put them in a food processor. Add the maple syrup and 3 tbsp of the almond milk and combine until smooth and creamy. Take out the mixture and put it in a non-stick frying pan. Mix the arrow root starch and the leftover almond milk together in a separate container then add it to the edamame mixture. Put the frying pan on a low heat and gently stir for about 5 minutes and the let it cool. Once it is cool, split the edamame mixture in half. One half, you will want to roll them into three even balls. Put the other half into a pastry bag to later decorate the cupcakes.
Cupcake
Ingredients:
1/2 banana
3/4 cup of spelt flour
1 tsp baking powder
1/2 cup of almond milk
1 tbsp maple syrup
pinch of salt
How to make:
Preheat the oven to 350° F. Combine all of the ingredients in a bowl. Evenly put the mixture into a cupcake/ muffin pan. Then gently place the balls of edamame into the center of each cupcake and make sure that you can no longer see the edamame ball. Bake for 10 minutes and let it cool. Once it is cool, decorate the cupcake with the edamame cream in the pastry bag and enjoy!
(you can top it with some crushed nuts!)
