Yes, a panini made with mochi (rice cake) instead of bread. This is the ultimate gluten-free solution! I like to keep my diet mostly gluten-free because my body tells me that it doesn't need or want too much wheat. I listen to my body so I am always trying to create gluten-free recipes that are usually wheat or bread based. This Japanese style panini is a perfect marriage between Japanese and western food. Ingredients:
1 mochi sheet or gluten-free tortilla
1 tablespoon of almond butter
1/2 of banana
1 slice of vegan cheese
(cinnamon to sprinkle on top)
How to make:
Cut the mochi sheet in half and place both sides in a non-stick frying pan on a low heat.
Then, spread the almond butter on to only one side of the mochi sheet. Cut the banana into thin slices and place it on top of the almond butter. Then tear the vegan cheese into strips and neatly place it on top of the blank side of the mochi sheet. Once the cheese is slightly melted, place the side with the cheese on top of the other side (face down). Cook both sides until golden brown. Once it is done, take it out of the frying pan cut it in half, sprinkle some cinnamon and enjoy!
