I See... Carrot Cake!


A total foodie! Always thinking about food.


I am VERY lactose intolerant. I have now gone PRACTICALLY (not 100% of the time) vegan and gluten-free because that is the diet (way of life) that works best for my body. Food and recipes I post will be 100% dairy free with vegan and gluten-free options. You'll see!



Ingredients:

A:

1 cup shredded carrots

8 dates (soak in hot water for about 5 min)

3/4 any kind of milk

1 tsp lemon

1 tbsp maple syrup

B:

1 cup brown rice flour

1/4 tapioca starch (instead of egg)

1/4 oats,

1 tsp baking soda

2 tsp baking powder

1/4 tsp nutmeg and cinnamon


How to make:

Set oven to 350°F

Combine ingredients A and blend in a food processor.

Then add in ingredients B.

Bake for 35~40min.


Toppings:

cream cheese sauce:

2 tbsp soy yogurt

1 tbsp vegan cream cheese

2 tbsp maple syrup


cinnamon, crushed nuts
