Most curry recipes are just too spicy and not flavorful enough for me. So I thought to myself, why not create my own. I am a huge veggie fan and try to incorporate lots of veg into my recipes. With this super simple Indian style curry, I did the same. I made two different kinds of curry using one base recipe.
Ingredients:
Half a can of chickpeas
1/2 large carrot
2 small potatoes
1/2 onion
2/3 cup almond milk
2 tablespoons curry powder
2 teaspoons coriander
2 teaspoons cumin
2 teaspoons paprika powder
1/2 teaspoon garam masala
5 chopped cherry tomatoes
1/2 cup of chopped spinach
How to make: Cut then boil the veggies. Put the veggies into two separate bowls to make two different kinds of curry. Add the chopped tomatoes to one and the spinach to the other. Put each mixture in a blender, one at a time. Mix the spices in a separate bowl and add in half of the spice mixture to each. Add in 1/3 cup of almond milk and add in 1/2 of the chickpeas to each and put it on a medium heat. Stir until thick and enjoy !
