Even when you are a lover of greens, sometimes you want to mix things up and have a different kind of salad. This is a protein packed salad perfect for afternoon tea. Your guests are sure to be impressed!
So incredibly simple yet so delicious.
Ingredients:
A:
1 cup of chickpeas
3/4 cup of cooked quinoa
2 tbsp chopped parsley
B:
1 tbsp vegan mayonaise
1 tsp dijon mustard
1 tsp soy sauce
The juice of 1/8 lemon
dash of salt and pepper
How to make:
Put ingredients A in a blender. Then mix in the blended ingredients A and B in a bowl. Place final mixture in any mold, add toppings and enjoy!
Toppings:
tomato, avocado and paprika (powder)
