Having your favorite comfort foods without all the calories, yes it is possible!
When I think of comfort foods, I think of something creamy. The perfect way to satisfy this craving is by making my delicious brown rice cream stew. It is vegan but also soy and gluten free! Who's hungry? I am, always.
Ingredients:
A:
1/2 cup of light brown rice flour
1 cup water
1 cup almond milk (or any milk)
3-4 cups of vegetable soup stock
B:
1 onion
*optional 1/2 lotus root
1/2 cup kabocha squash (or any squash)
2 small potatoes
1/2 large carrot
dash of salt and pepper
Toppings: a sprinkle of nutritional yeast and chopped parsley for taste and texture!
How to make:
Steam ingredients B. While steaming the vegetables, add the flour and water in a big, separate pot on low heat. Once combined, put the stove on low heat and add in the milk 1 tbsp at a time. Once the mixture becomes very thick, add in the veggie stock on a medium heat and stir until it becomes thick again. Lastly, add in the steamed veggies.
Mix well and enjoy!
