I am a planner. I can’t seem to be motivated to do any work unless I have something exciting planned ahead. As much as I enjoy my me time, I also love going out with friends or having them over. Having them over means, I get to cook for them. I always love cooking for my friends especially when I am trying out a new recipe. This salad, is perfect for lunch with friends. Check it out!
Ingredients:
Salad:
3 cups of baby arugula
3/4 cup of cherry tomatoes
1/2 cup of a yellow bell peppers
1/3 cup of kalamata olives (pitted)
1/4 cup of a spring onions/scallions
1 cup of vegan tortellini (pre-made) or quinoa pasta
1/2 cup of vegan mozzarella balls or simple tofu feta (recipe below)
1/2 of lemon (just the juice)
1 tsp of olive oil
sprinkle of Italian seasoning, salt and pepper
a handful of fresh basil
Vegan pesto ( to dress the tortellini or pasta):
1 cup of fresh basil leaves
1/3 cup vegan parmesan cheese or nutritional yeast
2 tbsp olive oil
1 large clove of garlic
1/4 tsp salt
1tbs pine nuts (optional)
Simple tofu feta:
1/2 package of extra firm tofu (200 g)
1 tbsp nutritional yeast
1tsp salt
1/2 tsp ground pepper
How to make the tofu feta:
Press the tofu and combine with the nutritional yeast, salt and pepper.
How to make the vegan pesto and salad:
Boil the tortellini or pasta, then let it cool. Make the vegan pesto by combining all the ingredients in a blender and set it aside. Once the tortellini or pasta is cool, dress it with the vegan pesto.
Wash the baby arugula and chop the cherry tomatoes, yellow bell pepper and spring onion. Put the veggies in a bowl and dress it with lemon, olive oil, Italian seasoning, salt and pepper.
Put the dressed the tortellini or pasta into the bowl of the dressed veggies. Add in the kalamata olives and the mozzarella balls or tofu feta. Lightly toss it all together and place some fresh basil on top for presentation and extra texture. Enjoy!
