I am always looking for ways to enjoy my favorite comfort foods and snacks without the guilt. As someone who has struggled with eating and food, I feel much better when I know all the ingredients are wholesome and good for you. These scones have a hearty texture but won't just sit in your stomach. It is hard to believe that the recipe does not require all-purpose flour, sugar nor eggs! Truly a little bite of heaven.
Ingredients:
(dry)
1 cup of spelt flour
1tsp of baking powder
1/4 tsp of salt
(wet)
3 tbsp of vegan butter
1 tbsp of ground chia seeds
1/2 cup of dates
1/4 cup of hemp milk (any plant based milk)
How to make:
Chill the vegan butter in the freezer and preheat the oven to 450°. In a small container put in the chia seeds and add 3 tbsp of water and let it sit for about 10 minutes. Soak the dates in hot water for about 5-10 min. In a mixing bowl add in all of the dry ingredients.Then add in the wet ingredients as well as the chia seeds and dates. Mix everything until well combined. Roll the dough into small balls and place them on to a sheet of parchment paper. Sprinkle the scones with oats. Bake in the oven for 9-12 minutes and enjoy!
