This is tofu? ! Chocolate Tofu Pudding! So beautiful, so simple, and so satisfying. You will not be able to tell that it is made out of tofu! With a little bit of coconut cream on top, it can be the perfect way to end a meal. Because it is so high in protein and made sugar-free, it is also guilt-free! It is super rich and creamy.
Ingredients (1 cup) :
130g silken tofu
3 tbsp cocoa powder
3 tbsp maple syrup
1 tsp raspberry jam
pinch of salt
1 (14 ounce) can of unsweetened coconut cream
tablespoons maple syrup
How to make:
Chill the coconut cream over night. Press the tofu and place in a blender. Add cocoa powder, 1 tbsp maple syrup, jam and a pinch of salt into the blender as well. Mix until is it well combined. Pour the mixture into a pudding cup. Chill for about 5- 10 minutes in the refrigerator. Put the coconut cream into a blender and add in the remaining 2 tbsp of maple syrup. Top a spoonful of the coconut cream onto the chocolate pudding and enjoy!
Optional toppings: sprinkle some cocoa powder and some freeze dried raspberries
